There are many benefits to eating foods that are in season. Fruits and vegetables taste much better at their peak because they are not frozen or packaged to be shipped.
Now that strawberries are in season, I’m going to share a fun and easy way we used them to thank our teachers for Teacher Appreciation Week at my son’s middle school AND share this chart Shari’s Berries has created which includes the peak season for over 50 different fruits to inspire your next meal or yummy dessert. We are huge fans in our family and it’s one of my Mom’s favorite gifts to receive (she’s the one who introduced me).

Thanks to Shari’s Berries for sharing this chart! Speaking of berries, I’m going to show you how we made the super easy brownie and strawberry parfaits to share with all the teachers at our local middle school this week. Aren’t teachers the best?
Some of you may remember my son Ethan, who has Cerebral Palsy? Well, he is part of a FANTASTIC program at his school called the Sweet Day Cafe. The Sweet Day Cafe was started in 2015 in our school district, operated by students with disabilities. It is a culinary program they have each week where they shop, plan, and prepare many pastries and breakfast dishes to sell at the cafe (operated in their classroom) on Friday mornings. It is open to those in the school and in the community. They use the money to fund their class activities and field trips, and some to purchase the foods they will need for the cafe. It provides opportunities for learning, life skills, and community involvement for the students. It has been a wonderful program for Ethan, who is an aspiring chef and loves anything to do with food.
One of the other moms decided it would be nice for the Sweet Day Cafe to honor all the teachers in the middle school, by putting together these Strawberry-Brownie Parfaits. It was the perfect idea and such a fun project. Thanks, Teressa!
It was so easy to do. We used Teressa’s secret recipe for brownies, but you can use any brownies whether they are homemade or a store-bought mix.
We began by slicing strawberries…lots of strawberries! We were preparing about 90-100 parfaits.
We can’t wait for the teachers to try these yummy parfaits! And, thanks to each and every one of our teachers out there who are pouring their time and hearts into our children. I know the teachers in my son’s class are super special people!
